4 eggs, 40 dkg icing sugar, 1 tbsp cinnamon, ½ tsp gingerbread spices, cloves, star anise, 1 tsp baking soda, 15 dkg melted honey, 70 dkg plain flour.
Beat egg whites add egg yolks and spoon in sugar. Whisk until firm. Mix in spices, baking soda and honey at the end add flour in stages. Leave the dough rest overnight. After baking fill with creamy filling and coat in chocolate.
