Blueberry „bubbly“ cake

In Czech we called „Bublanina“ 

What we will need

  • 180 g sunflower oil
  • 80 g white (crystal) sugar
  • 4 eggs yolks
  • 200 ml milk
  • 20 g cornstarch
  • 1 pc baking powder (12 g)
  • 320 g cake flour
  • eggs whites snow (from 4 leftover egg whites)
  • 300 g (or more if you have) blueberries

How to do it

Whisk together 3 of first items in „what we will need“ list (with hand mixer at least 1 or 2 minutes). Then put into milk, cornstarch, baking powder and flour. Whisk it together till everything is one compact pastry. Then in another bowl whisk egg whites snow (before you mix it put into egg whites dash of salt, snow will be stronger. Trick how to know when the egg whites snow is done: When you turn over the bowl and everything stays in, it’s done!).

Now you can preheat the oven for 180 degrees. Prepare for yourself baking tray/cookie sheet (35 x 26 cm) and put inside baking paper. Now you can recast pastry from the bowl to baking tray. The blueberries come on the top (you can mash them little bit before to let the juice. Try also another fruit like fresh or conserved cherries.) Finally put into a preheated oven and baked for 30 minutes.
